Chicken & vegetable stir fry

Serves 2-3 

1 capsicum 

1 bunch of broccolini (5-6 stems)

1/2 cauliflower

1 cup of sliced mushrooms

1/2 red onion

1 bunch of spinach (3-4 stems)

1 garlic clove

1 table spoon of coconut oil

2 stringed chicken breasts from a pre cooked cook. 

 

  • Dice garlic clove and add to pan with coconut oil on low until you add the next ingredients.. 
  • Slice capsicum, onion, cauliflower and add to warm to high frying pan with the broccolini stems.
  • After 3 minutes of frying add the remaining ingredients and fry on low for 5-8 minutes (mushrooms, spinach and stringed chicken). 
  • Mix well before serving. 

NOTE:

1. To help with the cooking of the ingredients place a lip over the frying pan on the last 2 minutes of the cooking time to help stem and simmer the tastes together. 

2. Add more coconut oil if mix begins to dry up when frying. 

3. Add your own herbs and spices if you like - turmeric or chilli flakes would be a great example.
