Eye fillet with Béarnaise butter

Prep 5 min  | Cook 10 Mins  | Serves 2-4. people

 

INGREDIENTS: Béarnaise butter

  •  125 g butter
  •  1 teaspoon capers
  •  2 teaspoon dried tarragon
  •  1/4 teaspoon salt
  •  1/4 teaspoon pepper

 

  1.  Let butter sit out in room temperature until soft alternative place in microwave for about 20-30 seconds
  2.  Chop capers
  3.  Add butter to a bowl
  4.  Add rest of ingredients
  5.  Stir until well mixed
  6.  Spoon out butter on baking paper
  7.  Spread out diagonal
  8.  Roll butter up in baking paper
  9.  Store in freezer
  10. Take out 10 minutes before serving and cut up

 

 INGREDIENTS: roasted vegetables

  •  650 g pumpkin
  •  1 red onion
  •  1/4 teaspoon salt
  •   1/4 teaspoon pepper
  •   1/4 teaspoon tarragon
  •  1 tablespoon olive oil
  •  1/2 teaspoon sesame oil
  • 1 garlic

 

METHOD:

  1.  Chop up pumpkin and onion
  2.  Add to a tray with garlic cloves
  3.  Sprinkle oil and spices
  4.  Cook in oven for 30 min in 190 degree

INGREDIENTS: Beef

  •  2-4 beef eye fillets

 

METHOD:

  1.  Season beef with a bit of salt and pepper
  2.  Grill on Bbq for 4 minutes on each side

NOTES/TIPS:

  •  make a double batch of butter and keep in freezer for another time
