Eye fillet with Béarnaise butter
Prep 5 min | Cook 10 Mins | Serves 2-4. people
INGREDIENTS: Béarnaise butter
- 125 g butter
- 1 teaspoon capers
- 2 teaspoon dried tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Let butter sit out in room temperature until soft alternative place in microwave for about 20-30 seconds
- Chop capers
- Add butter to a bowl
- Add rest of ingredients
- Stir until well mixed
- Spoon out butter on baking paper
- Spread out diagonal
- Roll butter up in baking paper
- Store in freezer
- Take out 10 minutes before serving and cut up
INGREDIENTS: roasted vegetables
- 650 g pumpkin
- 1 red onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon tarragon
- 1 tablespoon olive oil
- 1/2 teaspoon sesame oil
- 1 garlic
METHOD:
- Chop up pumpkin and onion
- Add to a tray with garlic cloves
- Sprinkle oil and spices
- Cook in oven for 30 min in 190 degree
INGREDIENTS: Beef
- 2-4 beef eye fillets
METHOD:
- Season beef with a bit of salt and pepper
- Grill on Bbq for 4 minutes on each side

- make a double batch of butter and keep in freezer for another time
